Alfalfa Grass

Alfalfa got the rub from the Arabs who held the plant sacred and it earned various sobriquets like 'the father of all foods', 'the great healer', 'Queen of Forages', etc. It is a perennial herb ( one of the nature's oldest legumes) that grows almost throughout the world and in almost all climates ! In fact, alfalfa stands as one of the largest leaf crops in the world today.

The deep feeder roots of alfalfa reaches out over a hundred feet and absorbs a bundle of minerals along the way. These combine with water and sunlight to produce high protein, minerals and vitamins.

Initially alfalfa was a nutritious animal fodder but soon it entered the foray of superfood. Imagine the Chinese using alfalfa since sixth century to treat kidney stones, swellings and fluid retention. As early as 1597, English herbalist John Gerard, recommended alfalfa for upset stomach.

In Russia and China the leaves are still used as a vegetable. In Latin Ameirca, the fruits are used to treat cough and in India the seeds are employed to create cooling poultices for the treatment of boils. The nutritious sprouts are universally consumed. Alfalfa extract is popular as an independent supplement and widely used by food makers as a source of chlorophyll and beta-carotene.

Beta-carotene is a natural fat soluble pigment responsible for the colour of the vegetable and fruits. It is an essential nutrient and serves as a precursor to vitamin A. Beta-carotene is also valued for its anti-oxidant activities.

Alfalfa is rich in protein and contains almost all the vitamins and minerals, besides the trace elements. Calcium is so high that it almost goes off the charts. It can even be obtained in almost pure form by reducing the leaves to ashes. Besides plentiful of chlorophyll and calcium, vitamins A, B 12, E, K and beta-carotene are worth mentioning.

Alfalfa is a rich source of vitamin K ( promotes blood clotting) which is found in very little quantity in most plants. Health benefits attributed to alfalfa include - allergic disorders, arthritis, stomach disorders, peptic ulcers. It is believed to be a great stimulant that also works as a laxative and diuretic.
