Barley Grass

"What has disease to do with men who live upon barely-bread and buttermilk?" is a popular Iranian saying. The medicinal and nutritive value of barley has been lauded by almost all ancient civilizations. Sumerian writings and Egyptian papyrus scrolls refer to barley and beer making. Athletes in ancient Greece were given barley mush to boost their performance and Hippocrates prescribed barley for various ailments. Roman gladiators consumed barley before the deadly bouts and they were often referred to as 'hordearii', which translates as barley eaters. Barley finds mention in the Bible no less than forty times !

Barley is a very hardy plant that finds itself comfortable under a variety of climatic conditions that may range from sub arctic to mountainous. It is of the genus Hordeum and belongs to the grass family - Poaceae. About half the barley cultivated in the world goes to the cattle and the other half is put to a thousand uses from baby food to beer production.

In ancient times, barley's grain was used but its nutritive potentials are best found hidden in the young green leaves that form before the grain. In addition to the curative chlorophyll, these leaves are power packed with protein, fat, carbohydrates, enzymes ( particularly superoxide dismutase which detoxifies harmful radicals in the body and retards the aging of cells), vitamins (beta carotene, Vitamins - B 1, B 2, B 3, B 5, B 6, C), phytonutrients and minerals ( 7 times more calcium than in oranges, 5 times more iron than in spinach, potassium, magnesium, copper, phosphorus, zinc), etc. This makes barley grass a complete and an appealing wholefood !

Among all the green grasses, barley grass is rated as the most nutritional. It can boast of 66 times more chlorophyll than in spinach. Besides detoxification, chlorophyll helps to cleanse the body, fight infection, heal wounds, promote the digestive and circulatory system.

The alkaline nature of barley green helps to maintain the delicate pH balance ( body's alkaline-acidity ratio), which is essential for the functioning of the body. Barely green is rich in amino acids ( building blocks of proteins which are major constituent of every cell). Barley green proteins are polypeptides - smaller proteins that can be easily absorbed by the blood, where they promote the metabolism of cells and help in the detoxification process.
